Brownie cookies

A decadent cookie that will have you believing in the lord.

Ingredients

• 125g butter
• 2dl sugar
• 1.5dl brown sugar
• 200g dark chocolate, 70% cacao
• 2 large eggs
• 3dl flour
• 3 tablespoons cocoa powder
• 1 teaspoon baking powder
• 1 pinch salt

Instructions

1. Melt the butter
2. Melt the dark chocolate into the butter, don’t apply more heat than necessary
3. Mix the chocolate-butter into the egg fluff gently, try not to deflate the air
4. Sift the dry ingredients into the mixture and fold together until nicely incorporated, again try not to deflate the air in the mixture
5. Don’t get scared that the cookie dough is too loose, it’s expected behaviour
6. Bake at 175°C in the oven for 10-15 minutes (using an ice cream scoop to get perfectly uniform cookies is encouraged)
7. Hej, since you got the ice cream scoop out, drop a nice scoop of vanilla on that bad boy
