Dill Mustard Eggs with potatoes

A simple, fast and ultra delicious dish consisting out of mostly ordinary ingredients: Eggs, potatoes, butter, creme fraiche.

Ingredients

  • 500ml Water
  • 1/2 tsp. salt
  • 800g small diced potatoes
  • 8 eggs

Ingredients sauce

  • 1 bundle of fresh dill
  • 1 onion
  • 30g butter
  • 30g flour
  • vegetable broth
  • 150g creme fraiche
  • mustard, medium-strength
  • 1/2 tsp. pepper

Instructions: Eggs and potatoes

  1. Cook potatoes in salted water
  2. Boil eggs (11-12min)
  3. After cooking the potatoes, store 400ml of the salted water asides for the sauce
  4. Refresh the eggs with cold water

Instructions: Sauce

  1. Cut the dill into small pieces
  2. Cut the onion into very small pieces
  3. Fry the onion together with the butter in a pot
  4. After 2min add the dough. Keep stiring for about 3min
  5. Add the previously stored 400ml water, the broth (cubes or powder) and the creme fraiche. Stir for as long as it takes to get a smooth sauce without any chunky bits
  6. Finally add the dill, mustard and pepper and stir it properly into the sauce.
