Spinach Pesto
A healthy green sauce to use however you please.
Ingredients
200g baby spinach
one handful of basil leaves
50g pine nuts
170g freshly grated parmesan or grana padano
2 cloves garlic
juice of one whole lemon
some drizzles of olive oil
garlic powder to taste
salt to taste
pepper to taste
Instructions
Put the spinach, basil, cheese and pine nuts into a deep bowl
Mince the garlic and add it in
Squeeze the juice of the lemon into the bowl
Add in some small drizzles of olive oil
Use an immersion blender to make a sauce
Add more olive oil until you have a pesto-like consistency
Season to taste with salt, pepper and garlic powder
